I started with Embodiment of Scarlet Devil (aka 2hu 06). It's probably the best door in, but it has some old game problems.

Imperishable Night is also noted as a good entry point, but IMO it's the best in the series(albeit easier than others) and so maybe it's better to not eat the cherry before you try the cake.

Embodiment is what I'd advise. Also you will get extremely frustrated and tired at doing level 1 over and over and over again. As you progress through the game, you will see it less and less.

Using continues isn't shameful for a beginner.

Game is only truly won when you win in one continue.

Just play Embodiment of Scarlet Devil until you can 1CC it on normal difficulty. It'll take you a good while but don't be discouraged, you'll get it eventually.
Just remember don't hoard bombs, if you look like you're going to die don't think, just use it.
Then play Perfect Cherry Blossom.

And no don't play Perfect Cherry Blossom first because then you're just going to come back whining about how Embodiment doesn't have the little dot thing when you decide to play it later.

Alternatively if you don't want to get into the games but the actual series and stuff then just read the mangas and stuff like that because the games in all honesty don't really help much, you'll be almost just as confused about everything in the fanbase after playing the games than before, since all the stuff people talk about comes from the manga and fanworks.

After that, just abuse your bombs whenever you think you're about to be killed. Being able to deathbomb is a useful skill to have. Facing her three times does kind of suck though

There is only one official PS4 Touhou game and that's Urban Legend in Limbo. Anything else is a licensed fangame. Personally I'm not a fan of ULiL, it and Hopeless Masquerade (the game whose engine ULiL is based on) both feel inferior compared to the first generation of fighting games. Touhou is primarly a series of shmup games so it's not a good impression anyway.
Like other people said, you should start with the first game on Windows, Embodiment of Scarlet Devil. There are games that come before it and a couple of them are pretty good and worth playing later on if you like what you see from the Windows games, but EoSD has all the main mechanics of later games without having any complicated gimmick.

Raymoo is perfect!

Start with 6 and go forward. EoSD is certainly the roughest windows game as far as graphics, sound quality, and that shit goes, but that's expected of the oldest windows game. Play your way to 16 (coming out in August) and then play the PC98 games if you're stilly hungry for 2hu. You don't need to 1cc each game, just get a good understanding of each before moving on. Once you've experienced every game, PC98 included, go back and 1cc/play for score. Also read the manga and the CD stories. The CDs aren't breathtaking on their own, but reading the story while listening to the music is fantastic.
