Skyrim non SE is best right now.

That being said you should play modded oblivion first.

original 2011 version. SE is better in theory because it's 64-bit but it doesn't have a script extender now (or likely ever) so most of the good mods aren't available for it yet.

SKSE64 is dead and ENB is missing a lot of features in SSE so you're much better off modding oldrim.
Besides there are enough fixes released for oldrim that pretty much makes it as stable as SSE anyway.
