A regular Witcher isn't particularly strong and Bonhart proves that a regular human can be as good of a fighter as a Witcher. Most Witchers are expected to die from a monster, which makes most monsters somewhat on a level with a Witcher. It is confirmed that many Witchers decline contracts if they feel they're too risky, especially if they aren't already broke that week.

Geralt is the top Witcher, but it's not like he no-damages every contract. On multiple occasions he got badly injured during a fight, even with regular monsters. He definitely won't kill a dragon or a higher vampire.

Mages completely shit on Witchers, in fact they shit on pretty much everything.

Quite honestly, the way he plays in games is suicidal. Realistically, he couldn't get away with saying "yes" to every job he comes across. Even though he's a mutant with enhanced reflexes, strength, and an array of versatile signs powers, the amount of trouble he stirs with people should lead to constant assassination attempts and many of the monsters and apparitions he fights are seriously dangerous, even for a witcher.

tl;dr: I imagine a real life Geralt being a tad more low-key and emphasizing the whole witcher "neutrality" thing, whereas in game he's a hero who fights endlessly and brazenly upsets political types without a care in the world.

He can definitely fuck with people just because judging by the time he stuck a spoon in the guy's eye for annoying him or cursed the woman to become a wight for refusing to give him food. It does seem, though, that there are certain powers above himself: if you ask him about Ciri's location (assuming you finish HoS before finding her) he'll say that there are some things that even he cannot meddle with, so at the very least you could interpret the force of 'destiny' being stronger than him. Destiny does come up a lot in the Witcher series as well and is believed to be a really strong force like how a child of destiny was able to break the spell on Prince Duny in the last wish compilation.
It also seems O'Dimm is at least bound by his own contracts as well and can't just break the terms of a pact no matter how pissed off he is. The question is then why does he feel the need to make deals and contracts? It could be that he does it for fun, but my interpretation (which isn't necessarily the correct one) is that, because HoS is based on Pan Twardowski and other similar variations on Faust/deals with the devil which are all very heavily religiously themed, there is some kind of God/Gods in the Witcher universe who have sovereignty over people's souls and so O'Dimm does need to make his victims willingly agree to let him take their souls in order to obtain them.

It honestly felt very out of character for Gaunter. He'll fuck you up if you try going for him, scholars who try to learn things find things about him die, and people who cross him in his contracts will get fukt.

hes tough and clever, and by the age he is in the game one of the best mortal swordsman there is. But I mean if you take off his armor its plain to see how many close calls hes had. Because most people who played TW1-2 didn't read the books. I agree with you on how CDPR should have unveiled the identity of the Wild Hunt much earlier instead of giving off the impression they were these badass ghosts chasing Geralt for some reason. But then they had to deal with having their own stories and not introducing Ciri until the third game so it wouldn't be the smoothest storyline.
