I just finished the game, and holy hell what a fun ride. I loved the Ganon fight too.
Anyways I played on master mode first, should I start a new playthrough on normal mode?

I think the Ganon fight was disappointing, but I may have built it up too much in my head. I was expecting a battle that would force me to use all of my abilities, weapons, and completely push me to the brink.
Beast form was piss easy though.
