I dont watch anime but iirc, Gundams were pretty mobile and had space battles. Maybe if there was a space map with zero-g and titans got better movement tools it could work.

Considering every cockpit in Gundam past OYW tier stuff is panoramic that'd be trippy as fuck

Compare Zeta Gundam's (And all later UC) cockpits on the left to Thunderbolt/early UC cockpits on the right

Gundam mobile suits are also fast as fuck so having a first person view of that level of mobility would also be pretty fucking trippy

just make it into fast paced shooter, with enemy grades
something like DOOM or ShadowWarrior(2013) but faster with overdrive melee combat when you can jump from enemy to enemy and obviously boss battles with either very fast machines or very tanky
intermissions full on RPG on the ship/base(s)

I got tired of 2 dimensional jump puzzles very fast

game is flat, it has its high points like BT and whole titan thing
but execution of everything else is tiresome
