Same speed, turning circle and all that, the only real difference is the hit boxed and how the car interacts with the ball. i.e the long flat cars are good for "paddling" or the octane is better for 50/50s etc

Just play the shit out of the practice mode. I ground that shit out until I could at the very least hit the ball towards the goal 90% of the time in aerial training mode, then I fucking dunked on fools in unranked. Be sure to wear the propeller hat, it gives you better air control.

Also for fuck's sake rebind the controls to something that lets you access drift and boost at the same time.
