Superstar/Superstar Ultra is still so fucking cool.
I really like the most recent 3 as well.
Also 64 was really fun at its time.
And Amazing Mirror.
The old one's also still hold up.
Most spin offs are really good; you gotta mention Air Ride.

Super star ultra every other answer is wrong, also why is Dream land 3 level design so stale? By sand canyon I put the game off because I experimented with every power and animal buddy by that point and it was really glaring to me, bosses are decent though
