Fight sticks aren't really necessary unless you want to do tournament stuff. Just makes input easier.

BlazBlue is Guilty Gear 2.0 really.
It's pretty good and has a nice roster. The story is batshit crazy though.

Guilty Gear is the best 2d fighting game, currently. Blazblue is also really good, especially if you want something a bit faster paced, but the series is mostly finished with the last release (CF)

there's a bunch it just depends on your prefence

melty blood, guilty gear, tekken 7, vf5 and skull girls are all good options. Just stay the fuck away from SFV

The reason you see players use fight sticks is usually because they grew up playing these games in arcades. It's just what they're used to. The only thing that really matters is what you're comfortable with. Some controllers like hitboxes have certain advantages, but nothing supplants being actually good at the game.
