Hylians are basically humans with a dash of elf for the function of most of the series. They're mostly human but have a greater knack for magic than regular humans and longer lifespans.

The only game where this matters for a basis of comparison is Twilight Princess, where you have another human species that doesn't have the pointy ears.

Hylians are referred as being different from humans through a lot of the Zelda lore. Just Hyrule is (unsurprisingly) populated mainly by Hylians with the odd human town here or there.
