You actually time attacks. If you hit the guy before he finishes his attacks, you get a stunning and soul. That's why all your attacks on the first chain should be something fast and easily accessible. Doesn't really matter in normal, but in chaos all the button mashing gets you only so far.

Alternatively just wait for one of your mages to get a hit in then go bash away. That said on Chaos rokurou becomes a much better character to use.
