Should I play this game?
If so, how do I play it? I can either pirate it on PS2 and play the PC version on a craptop, I don't have many options.

Play the ps2 version. The PC version can be a headache (though not as bad as the first).

PS2 version for sure. Have you played the first game? I'd recommend playing Soul Reaver 1 & 2 along with Defiance. That should give you the complete story really. Excellent games, though I'm not sure they have aged all that well.
