Nestle yourself up against a cliff but don't dig into it until you're ready. Get crops planted asap and make sure you setup a couple defensive positions and you're good to go.

Unless they've changed it what you want to do is put down a single wall and put a roof over/around it like an umbrella, put some rock chunks or sandbags around that and make yourself a little shaded area with cover. You're units inside that when defending gain a cover bonus and higher evasion from being in the dark.

You don't need a mountain but as noted it limits the angles you can be attacked from.

You just have to be careful about digging into them because dug out mountain tiles can spawn some nasty things.
