Pixar have a significantly easier job. They don't have to worry about real time running, so they can shit out a NS solver that takes 6 months to run, is accurate and looks good. You only really have to understand a couple of things

Xehanort from KH II(the original guy, not "Ansem" and Xemnas) is basically "an ancient evil awakens" villain who dates all the way back to the war mentioned in Kairi's grandmothers story

When a person's Nobody and Heartless are defeated, the original person comes back to life. Since "Ansem" and Xemnas are dead, the original Xehanort is back to fuck shit up

This means that you actually inadvertently played right into Xehanort's plan. In fact, everything that has happened up until this point has pretty much proceeded all according to keikaku

So basically Xehanort's the main bad dude, everything's been his plan all along, and the main goal in KH III is to stop him from getting the true Kingdom Hearts(Kingdom Hearts has appeared in almost every game, but apparently it's been a "fake" one every time and we literally haven't seen the real one yet). Xehanort's been reforming Organization XIII by gathering vessels to fill with clones of his heart(he's mad powerful and can apparently do this). To combat him, it is prophesied that seven guardians of light are required and that the battle will reveal the true Kingdom Hearts once and for all. They're forced to participate in this battle because if they don't, Xehanort will just use the seven princesses to fulfill the prophecy.

There are a bunch of side characters that are made to seem important but really aren't. All you need to know about them is that everyone except Sora got a bad ending and III is set up to be their redemption. Also, despite the metric fuckton of prequels, sequels, and interquels, we're still no closer to understanding the true nature of Kingdom Hearts, where keyblades came from, what the world was like before it split and how the split occurred, etc. It seems if these questions are ever going to be answered, it'll all be in KH III.

Nutshell version, the widow of King Louie's VA from the original movie got really upset with Disney because Louie was in Tale Spin with a VA who sounded very much like her late husband and she caused so much trouble for Disney that they left Louie out of everything. BUT Disney has been releasing several big movies a year, and now that Pixar isn't off limits that opens a lot of possibilities for worlds
