Zelda and Final Fantasy started off with open worlds.

Final Fantasy shouldn't have open world since it focuses on linear story events. Their eventual change to linear 'hallways' was actually a smart move, though it didn't fix the myriad of other issues the series has.

Zelda should have an open world since it is suppose to focus on open exploration and free roaming. BotW and Link Between Worlds is finally returning to what Zelda should have been from the beginning.

If you think this only got bad recently I don't know what to tell you. Maybe you hate open-world because it doesn't work well with movie-games.

Open-world is harder to implement but that's because it's the future. At its basic definition, it simply means the player should have more places to play in and explore, more content. Less limitations. It's like saying higher graphics ruin games just because they demand so much development resources. Yet both increased choice and higher graphics, increase immersion. You want things to be retrogressive.

Open world really isn't the future. If anything, we're starting to see a downswing in open world games because they require so much more effort from developers. And people buy games the same whether they are linear zones or open. You're going to see a big switch back to linear story games in the coming years. The exception will be Sony who tries to rush out a bunch of clones of BotW and Mario Odyssey.

It is the future. The ebbs backward, or "downswing", back and forth, between linear and open-world, are short-term fluctuations. In the long-term the trend continues, precisely because it will demand less and less resources as time goes on (what with better content-generating algorithms, only the main content needs to be hand-crafted).

Proof: the examples of "downswing" you post will probably contain less linearity than even some "open-world" games of previous decades, not to mention the linear games of those times.
