I don't know if this would translate into a good game to be honest. What made the movie effective was the slow burn proceeded with the vicious, brutal, completely unexpected left turn in the last act.
It would basically be a quest with 1 hour of walking and talking and 1 minute of action.

I see it as more of a side quest of an RPG video game. Like one set in the wild west. I've never played RDR, but maybe something like in Fallout or Stalker.
You get a quest in a town where the residents need help recovering one of their kidnapped inhabitants, so you join a rescue party and go on the expedition where you have to survive several nights camping out in the wild. You have to ration your provisions and stuff as well.
