Order's not all that important. If you like Metroid then you might want to skip to the metroidvania style games, but I'd still suggest you try the classicvanias too.
If you want to start with a classic, try either CV1 or CV3, and move on to stuff like Bloodlines, SCIV, and Rondo.
If you just want to jump into the metroidvanias, start with AoS or SotN and then just play whatever else you want, they're all good.

Release order every time, regardless of series

Everybody will suggest you to play them in order of release but I think that it's not that important. Castlevania is not always in the MetroidVania style but they worth to play too.

The one I'd recommend.

Castlevania 3 Dracula's Curse (My favourite from the Nes trilogy)
Rondo Of Blood
Symphony Of the night ( it is a metroidvania and make sure that you play it after Rondo of Blood Because it's a "sequel")
Bloodlines
Curse of Darkness (Just finished it for the first time had a fun time with it, It continues the story of Castlevania 3 in a way)
Lords of Shadow, the castlevania/v/ags will try to make you think it's shit but it's amazing. Only play the first one and if you liked it a lot you can try the sequels but they are not that good.

You can play any gba and NDS game. They are all Metroidvanias. My favourite is Order of Ecclesia. Not a fan of the sorrow setting.

Go ahead and play Castlevania 1, if you don't like that then try SotN.

Or play Rondo of Blood followed by Symphony followed by picking one at random

Lords of Shadow is a decent game.
