Unfortunately you stepped on the first game with a real butchered singleplayer.
ExVs was already a bit bad compared to earlier games but still had some life in it due to the next plus vibe.

If you don't mind playing older games with extensive and well made sp modes try out GvG Next Plus and OMNI vs ZAFT, with properly tweaked graphics settings they're not bad with the psp emulator.
Mind that next plus is basically the same gameplay wise as exvs and FB without some features while OvZ is a bit slower and more technical

You can the pick and level up your unit and the IA unit that will nearly always be on your side during missions.
Most missions are mixed in terms of what happens but others are real story from the shows based ones while a few forces you to use a specific unit to recreate certain scenes (God vs Master and then Devil).
You can decide your "roster" before starting a route, difficulty and paths increases for each route and you are encouraged to pick different units to make sure you can complete all of them.
The roster is very well varied and there are a lot units you don't see in later games.

OMNI vs ZAFT sp is divided in two campaigns depending on the faction of your choice and they'll follow the story of SEED with the perspective of that faction.
Missions are linear but you can repeat them for XP, you start with a basic unit and via upgrades said unit will "evolve" in another, stronger one. There are wikis with the upgrade tree for each faction.
Solo or mp battle mode is neat because you can pick unit and pilot separately.

Gundam Wing is factually the worst thing to come out of the franchise. Its only contribution to the series is a collection of top notch mobile suit designs, otherwise, its story and characters are some of the most autistic and horrendous pieces of shit to come out of any anime.
