It's not really that. Just more cooks. Big organizations make games in weird corporate rituals because that's the way to make a lot of people work in one direction. This kills the sublety that can exists in more personally connected teams or one-man developers.
I've played a couple hundred hours vanilla on consoles. Why does the game just dead end all of a sudden? Why do the guild quests lead nowhere? Why the fuck is the head of the college, dark brotherhood, thieves guild, nightingales, companions and the dawn guard taking five hundred gold bounties to fucking kill bandits?

From Morrowind to Fallout 3/NV the music in the games glitches the fuck out, but it's only the music. All other audio sounds fine.

As a fairly experienced modder I can tell you that you should just buy old Skyrim with all DLCs.
Nobody knows when the script extender for new Skyrim will come out and without it, there is a large part of the best mods not available.
You can make Oldrim look awesome, even more awesome than Special edition.
There are some memory advantages on the new version but frankly speaking they are not that great.
Look into Requiem for old Skyrim. It is awesome.

Looting is one of the interesting things in TES but the actual loot is so shitty. The actual gold and jewels is barely worth anything. It's not immersive to run off carrying 3 enchanted suits of armour and twelve enchanted warhammers because that is where the real cash is.
