Developers learn from the mistakes of the original game and iron out some problems, but don't go too far in removing aspects that while may be unpleasant, give the games a lot of their charm. It's also usually a second chance to prove themselves and they receive more money for the project

The first game is kind of a prototype for the series. The developers don't yet know exactly what they want so they're kind of just testing stuff and for this reason the first game often feels outdated and lacking when played later.

The second game is essentially the first game done right. The developers listened to the feedback from their fans, learnt from their previous mistakes and realized what was wrong with the first title and thus fixed everything in the sequel. If the first game is an unpolished diamond, the sequel is the polished one.

Then finally with the third game the developers are desperate to make it different from the second one so they start adding all kinds of different gimmick bullshit while putting less focus on the core gameplay that made the second entry in the series so good. Essentially, they're ruining a potentially great game by adding a bunch unnecessary stuff that nobody asked for.

Of course there are series that don't follow this pattern at all (Devil May Cry most importantly) but for the most part it seems to hold pretty well, especially with platforming series (Crash, Spyro, Ratchet & Clank, Sly, etc.)
