Why does literally every single game made in the last few years have to be open world?
I want to fight monsters and baddies and shit, not spend 2/3rds of my playtime running/riding a horse through empty fields/deserts to get to the next level.

It will take a while because it's relatively easy to use tools to create a believable landmass with some nature and stuff but really hard to fill it with interesting content that's not repetitive as fuck and clearly an afterthought.

Not really, you still need to put stuff in there, like actual mechanic or systems, i.e. Crafting, leveling + skills, dynamic events which is random side mission that occurs repeatedly.

If you can make a good looking open world, that is a bonus. I must say Ubisoft is very good at making historical open-world environment, it is not easy and takes a tremendous amount of works, but empty or not is another thing.
