The in-game portraits for the new version, looks like they just took the old ones, removed some details, and called it a day. Now he looks like a random anime protag. They should've just polished the old ones up a bit, and it would've looked way better.

It is marketable, just not to the kids and the casual audience.
Kaneko himself being the producer probably knows and doesn't care as long as he can keep working on SMT for at least a bit of profit, most old devs running decades old franchises that aren't FF or DQ are already aware of this, most of your fanbase right now is in their late twenties or mid thirties by now, many of them are also fujos.
It happened for all of the old, big franchises that refused to change and are now "niche", either the dev really like what they're doing and keep on working on the series for the core fanbase or the series simply dies, otherwise it get "adapted" to stay relevant.

The image is low quality so of course it's gonna look "paper textured". Also how does the body look like part of the background, while his head doesn't? The only way I could see that is because of the skin.
