Depends on the track. If there's a ton of sharp curves, triple. If it's Baby Park or any map with really long strips of straight/minor curves, gold.

What gamemode, and what map? Three mushrooms is better to hit secrets on time trials consistently, but the gold mushroom is better in a standard race against other players with items or on a flat track with no secrets.

Golden mushroom for courses with a lot of straightaways, triple mushroom for courses with a lot of hairpin turns.

Easier to use effectively if you do need them
Easier to get rid of quickly if you don't
Especially in recent games where maps are curvy as fuck.

Triples are more versatile. Use the gold mushroom for a one time super boost. Or have 3 shrooms that can be used together to simulate a bit boost or individually in strategic positions to maximize effect. The 3 shrooms are better in almost every way unless the track is just a straight line.
