Anything Japanese in origin is consistently mispronounced. It's a little ironic, because English phonology is really complex compared to Japanese. The only Japanese syllables that might be difficult for English speakers to pronounce are anything in the ry- line. (e.g. "Ryuu" is a single-syllable word)

Sorta, yes, but that's a gross oversimplification. Classical latin has a slightly smaller set of letters and comparatively little punctuation. Post-empire, the various european nations took it and adopted it to their own needs, adding or dropping letters as required. The only real standardization was Church Latin, which evolved over time (albeit slowly). Since everything was handwritten, including by the monks you mention who brought roman writing to Ireland, words and scripts diverged over time.

Pre-monks, Irish writing was only the old runes and glyphs, which were mostly symbolic. When the roman alphabet came to the isles, it just kinda got mixed together with runes to produce a comparatively large alphabet (30 something characters). That persisted basically until the printing press came around, which forced standardization. The first presses were all made on the continent, so they used the alphabet from there, and Ireland / England just kinda had to make due. There's still a lot of weird artifacts in the language from forcing the larger alphabet into a smaller typeset.

Finally, the english invasion / conquests of Ireland and subsequent stamping out of Irish culture and language (almost to the point of extinction) meant that all the traditional irish names and places got reframed with english pronunciations, and isolated from their root meanings. And here we are.

ポケモン (PO-KE-MO-N) is a shortening of ポケットモンスター (PO-KE-T-TO MO-N-SU-TA-A), AKA Pocket Monster(s). Japan always does these kinds of brand shortenings, like with Smash Bros. (スマッシュブラザーズ; Sumasshu Burazaazu) being shortened to スマブラ (SumaBura; SmaBra), and the term ポケモン has existed officially since the very first games. Originally, there wasn't a set romanization of ポケモン, and various early pieces of Japanese media even called it Pockemon as a shortening of Pocket Monster(s), and that's fair.

ポ(Po)ケ(ke; cke)ット(tto; t)モ(Mo)ン(n)ス(su; s)ター(taa; ter) would make ポ(Po)ケ(cke)モ(mo)ン(n).
When the series was making its way out of Japan to international audiences, "Pocket Monsters" could not be copyrighted since the brand "Monsters in my Pocket" was already registered and was judged to be too similar that it could possibly confuse people looking for a specific product. Thus Nintendo decided to go with just the shorthand name, ポケモン, and it was officially trademarked as Pokémon. While "Pokemon" is the literal romanization of ポケモン, the e with the acute accent (é) was most likely given so that people reading the name wouldn't think it was pronounced "Poke" (as in to poke something). You don't have to keep playing dense after someone explains to you that you only have to pronounce each syllable as you would if you encountered it in isolation - not as part of another word - and then stick them together to form Mario.
