Castlevania has very little story, it makes no sense to make it into a show really.

While Dracula himself has always relied more or less 100% on magic the games have long established that Castlevania has all sorts of fields of study inside of it, from magic to alchemy to other more scientific fields in general.

He could very well have simply shown her the laboratory wing of the castle that exists but simply doesn't get used. Only thing weird about it is the castle being described as a traveling engine, because in-series canon has it more as a sentient being, like a giant demon in the shape of a castle.

Pretty much. At the time Trevor is starting to confront what it really means to be a Belmont, and he made an oath to kill Dracula since all he knows is that his armies are fucking everyones shit up. He doesn't know that Alucard isn't Dracula, so when he sees a Vampire rising from a coffin he just puts two and two together and figures even if he's wrong it'll be good to kill a vampire. While they fight Alucard is talking to him, exploring where his head is at. Eventually they come to a stalemate and Alucard reveals to Trevor more context and they come to an agreement.

Everyone is praising S1 so much on internet, I really don't understand it.
The voice acting was pretty much the only part I enjoyed. Animations and art were for the most part trash except for two fight scenes, dialogue was whatever, quirky one-liners shoved in every minute or so, script was nothing impressive and stupid/illogical at times, soundtrack was bland and forgettable (where are the classic tunes, or even something similar if they have copyright issues?).
