The Guardians are also really fucking slow, but they have laser canons. But in his defense, the actual guardians (at least in the reveal trailer) are pretty damn fast and actually use their arms to attack. The way I see it, not sure if it's supported by actual lore, is that "Ganon" is more like the spirit and "Ganondorf" is the gerudo man that this spirit sometimes inhabits.
