AAAs are made rarely and only with the purpose to get mad dosh, so trying something other than the exact thing that made you rich in the first place may cause big problems.
Indie games are more like hit or miss, where 1 out of 10 may actually succeed at not being complete garbage, so when you're mentioning all of these super original kino indie vidyas you're forgetting about tons of complete trash made by unoriginal independent developers out there.

The same reason why big budget blockbusters tend to be unoriginal, it's because you need a lot of money to hire a lot of people to make a big budget game and projects with these massive teams tend to not have one clear vision behind them. Because you are getting your paycheck from a publisher and the publisher wants to make a profit you are pressured to follow trends that other profitable games do, and if it doesn't make as much money as your boss wants you risk not being hired again to work on more projects
On the other hand, indie games either never get finished or are very simple pixelshit because most indie devs need to work part time jobs while developing the game and also work in small teams so they can only accomplish so much within a given time frame, sometimes it gets to the point where projects never get finished
The alternative to this is crowdfunding so that independent developers can work full time on a game and potentially hire more people but there are a whole host of other issues associated with crowdfunding like scammers or the project never getting finished
So to answer your question OP it's because life sucks

The big companies don't do original unless they have some very rare visionary leadership that isn't afraid to rock the boat. It's not just in video games. Look at the crap being put out by Hollywood, or sci-fi publishing.
"Dune" was shopped around for quite a while before it was taken up, and that was Chilton that published auto repair manuals.

You want a honest option? Because they are easier to make. Any dev with the drive and knowhow can just try and make the game they want. Don't have to go through marketing, don't have to waste all your people on making the game purdier. You just make it. Like the good old PS2 era.
