The same reason they hated the vita. Their games don't sell nearly enough on those platforms yet they have to put in the budget of a AAA game that would otherwise run on all other platforms. Just take cod as an example, why make a switch version of your game if you can just make the next installment and sell it on 3 other platforms where you already have an established consumerbase?

Back in the 90s games were so much cheaper to produce 3rd Parties could develop original games for each console. Look how the Castlevania series had unique entries on the SNES, Genesis, and the Turbografx.

Then costs and production time went up and so devs started to just make games and then put them on as many platforms as they could.

Asking them to do one size fits all for Xbox, Sony, and PC and then make a unique version for the Switch is insane. And if the Wii is any indicator bothering to try leads to lackluster results as the devs for the Nintendo team are given lesser budgets and essentially are the B-Team. Nintendo's best option to catering to 3rd Parties is producing games with them, like that Rabbids Mario game.
