Shanoa can equip ancient armor, which makes her a lot more survivable than the other females in later stages. The lack of a healing spell/inability to equip the Philosopher's stone was probably done for balance or else she'd be too OP.

Almost anywhere is fine, honestly.
Castlevania 1 and 3 are good, 2 is cryptic at some points but there is a fanmade "improvement" called Redaction. The japanese version of 3 is superior, go with that.
CV4 is also good, Rondo of Blood (which has a "2.5D" remake for the PSP in which you can easily unlock the original 2D sprite version of Rondo and SotN with slight improvements)
With SotN the gameplay changes. The GBA/DS games are all good (Aria of Sorrow being the best GBA and Order of Ecclesia the best DS games).
Any version of SotN is fine but the PS1 translation is the more memorable one, just play the PS1 and PSP version.

Like the art is heavily idealised/exeggerated and the Japanese voice actors speak in a similar manner while western ones try to speak in a more casual realistic/believable way which is actually less fitting with the artstyle.

It gets better as it goes on. The writing is great all the way through but there's a lot of QUALITY in the first two episodes, and the voice acting is also a little iffy. For the first half of the show Trevor just sort of quietly mumbles when he talks.
