He had the fucking Astrals almost all on his side, all he needed was for one of them to make a new oracle or a new crystal. That's it. Or to just straight up kill the shitty space plankton that was eating up sunlight, if the astrals can make things that just passively destroy them I don't get why they can't just kill all of them and not have to worry about them any more.

They couldn't have just "made a new crystal", because the Crystal was a one of a kind type object. It's the last remaining piece of Eos (The God, not the Planet) an in it's literally her heart ripped out of her decaying corpse. Go take a look at the lava opening in the Rock of Ravatogh sometime, you'll find that it looks eerily like the outline of the crystal (you'll even see some crystal fragments on the edge signifying where the main crystal was removed.)

Then do any of the other stuff. If the Kings of Lucis are enough to independantly bring back light just because of the Ring of Lucis (another object the astrals created), why can't they do ANYTHING else against either of space plankton or man who ate a lot of people transformed by space plankton?
Like they just shit out so many deus ex machina in a row, and then even humans with their magitek made stuff that could surpass it, and then it's suddenly impossible to find another solution to a problem that already had three different solutions to it (crystal, oracle, ring). Or can't replicate even one of those a different way.

The use of the Kings of Lucis was to wipe out Ardyn, otherwise he'd keep coming back again and again and again (and keep in mind it took a lot of time for all of those kings to accumulate.) Space plankton is a subset of starscourge, both being not of this (Eos) world. Gods are susceptible to it as well (this is how Eos died), which is why they had to be very careful in how they approached it. Yet ALSO keep in mind the Astrals were selfish assholes (evident with Ardyn alone) and would have let the world fall to eternal darkness if the Crystal was not saved from Eos' corpse (as Eos was the only thing keeping the scourge at bay.) They're more "planet protectors" that suck at their job than Gods, really. The oracle, ring, etc. are probably the only things they can do given the time (and care) they had. The Gods in this story are flawed and selfish with their own interests frequently surpassing those of the world.

They make magitek and technology that can keep the starscourge at bay, along with stuff like Glaucos's suit that made him stronger than King Regis even. They could've just made a big light or some kind of mist or something that killed starscourge given certain lights already keep it away.
And there was nothing stopping them from just making more oracles. Or doing what the astrals did and make oracles themselves somehow, given they can make magitek that serves the same purpose practically.
Just saying, the setup for Noctis sacrifice being some final solution is pretty stupid when the actual problems he's dealing with have terrible origins that are dealt with by a million other things they should be able to replicate. Even Ardyn's just some guy who absorbed a bunch of regular demons, and that's enough to make him a near untouchable god.

He's, uh, the son of Eos. His brother (probably) is the other son who stole his crown. Eos had a child with a mortal, leading to her exile in Pitioss and eventual death. The Genji Gloves on her statue in Pitioss Ruins represent her two children.
Look at the design of Eos' Crown (Regis' Crown), Ardyn's hair and Eos' hair. They all have the same wispiness (The Crown to represent Eos and Ardyn's literally because he's her son.)
It'd be great if they actually explained all of this in the main story and didn't just leave it scattered around for players to find and piece together on their own.
