From a gameplay perspective, it's to stand out from other trees. All other trees have green leaves, so if you see the pink in the distance, you're more likely to go there.

From an in-universe perspective, it's a cherry tree.

I still think it's weird that the Deku Tree is a cherry tree, but BOTW is my favorite Zelda game, so I don't really give too much of a shit.
