I was in the same boat as you. I ended up playing FFXIV Stormblood. It's pretty decent, it's not exactly innovative or groundbreaking but it does a lot of things right. It's not for everyone but if you enjoy Themepark game design based MMOs then it's pretty much the best available right now.
