Say I wanted to play a 3D Sonic, which one?

Sonic Generations would give you a throwback to the Genesis era, while simultaneously giving you what the current-day Sonic games are like.

Generations is the best one.

Adventure series aged quite a bit but the charm really holds it together. Also some of the best vidya music ever made is in those games.

The Adventure games are the most like the Genesis ones, but the non-Sonic characters are hit or miss. SA1 is buggy and SA2 forces you to switch characters each stage. Play the one that sounds better to you.
The boost games are nothing like the classics, but I think Generations is also worth a play.

This. Had Dreamcast at launch, Adventure and then the sequel as the console died. Recently got my DC back out and both Adventure titles are rough. They have their charm and nostalgia for me but honestly I could see most people now dropping them. Might not be your thing.

Just play a few hours each of Adventure 1 and 2 so you can see the reality that 3D Sonic games are garbage.

And then play Generations/Colors for the exceptions to that rule.

If you play adventures 1 make sure to set the camera to free mode so that it actually works and isn't a piece of shit.
Makes the game 100% better.

As for recommendations each one has something terminally wrong with it so it's just a matter of finding one that pisses you off the least.
I find the Xbox 360 and PS3 versions of Unleashed to have minimal amounts of frustration even if the werehog is a fucking stupid idea.
If you just want the most value you can't go wrong with generations on the PC though.
That game lasts a long time if you're willing to apply mods.

I like 3d blast. The perspective takes a bit getting used to but once you do it's a pretty good experience with a great soundtrack. Plus I like that you can just take your time with the stages and it's simple as hell to 100% with those easy bonus stages. As far as "bad" Sonic games go it's actually pretty good

Sonic Adventure 1, and make sure you get the original PC version of it and not the butchered as fuck Steam version.

The Adventure Games are the defining series. Later 3D sonics would clean up the formula but Adventure and Adventure 2 Battle are what everyone remembers.

What's wrong with it? I have it with SADX mod and I'm pretty sure it runs better than my Gamecube version(never fell through a crack in the floor and wall). Plus it has cheats and unlock what ever you want if you're into that sort of thing.

It uses the tech of the Saturn to use better graphics and effects but personally I enjoy the original as it's more colorful, even if much more simple. Look up a youtube side by side comparison. I think they even have different music but it's generally accepted that Genesis won out that one.
