If they're good keep using them, Mario is a platform for different game mechanics built around a familiar structure but they usually don't feel stale, most companies don't have a quality IP like that to keep riding

1. They can sell off brand value alone. There's a reason people call Nintendo the Disney of videogames.

2. They only introduce one new "main" title for each of their IP's per console generation, and when they do they try to introduce new features/gimmicks so it doesn't feel like a run of the mill sequel. The only exception I can think of for this are the Kirby games and Pokemon.

3. They are making new IPs even now, there's just not a good reason to apply a new/interesting IP to a new gameplay mechanic if they can just apply it to a sequel/spinoff which will give them safer sells compared to being risky with a new, un-established IP.
