I think they liked her, but just didn't know what to do with her. It's like they wanted to keep their hot teacher character relevant, but didn't know how to do that after everyone graduates so they had her quit being a teacher and tag along because reasons, but then they never find a way to actually fit her into the plot in any meaningful way.
