You can use horseshoe crab blood because of it's lack of traditional white blood cells, to test degradation of certain cells and releasing potential poisons when the cells are all gone. Like botulism. Whereas regular blood coagulates and becomes different, chemically, over time, horseshoe crab blood shares a lot of similarities but is significantly easier to test the effects of potential poisons/rabies/stuff like that to find cures.
