You need to start again and redo every section of the game to get all the ending and since undertale is mostly story and mediocre schmup it's like starting a telltale game again for the "gameplay" section.

"Mediocre" story/gameplay is subjective and a relatively moot point. It still boils down to "if you want to see all the content, then you have to play longer." The edgelord route does give you the courtesy of letting you skip a lot of the puzzles and some bossfights to make up for the grinding at the very least. You can easily argue this is bad game design to make the player redo the same things to experience all the content and artificially extend the length of the game, but you have to keep in mind developers have a finite amount of resources, including time, to make a game, and to be honest, most people don't have a problem replaying games even when it's not to seek out all the buried extra content if they like the game enough. What's more some people see things like alternate endings/bossfights as a reward for playing the game again, rather than busy work to try and get their full money's worth or whatever. If they enjoyed the game then it has done its job.
