Undertale had gameplay. Don't get me wrong, OneShot had a great narrative, good music and setting, and the Solstice ending was kino, it just wasn't engaging from a gameplay perspective. Undertale had a good balance of difficulty and unique mechanics between battles that kept it fresh and replayable.

I liked undertale for its gameplay and finished all 3 main routes.

Yeah, it's true that he only has 1 hp and his attacks do 1 damage a piece, all of his power comes from the fact that he can dodge attacks like you said, and his attacks ignore your invincibility frames. Other strong monsters may do 10 damage per attack, but they have to wait a second to hurt you again, while Sans only does 1 damage per attack, but can attack you 60 times in one second. Not to mention that he can also prevent you from attacking for however long he wants, whenever he wants. Sans' stats may make him out to be shit, but his abilities show otherwise, just a like joke character / item that's actually strong as fuck.

OneShot don't ape Earthbound, it apes Yume Nikki which makes it inherently more niche. It doesn't do a good job of it either, it has a bunch of deliberately vague shit like all YN clones but instead of using symbolism or leaving things just vague enough that you have to figure it out, it just has straight answers that you literally couldn't get because the game was left unfinished for way too long.
