Vitality in XII affects statuses. Positive statuses (Protect, Regen, etc) last longer, harmful statuses wear off quicker. It doesn't have anything to do with defense.

I fucking hated this games battle system. Always gave up on the flying boss fight, I think it was a bird. Could never figure out how to hit it.
