The Old Hunters DLC from Bloodborne is literally perfect when compared to the main game.

Even the worst boss is better than most of the main game bosses.

The weapons are fun and more creative than the ones in the main game. Pizza Cutter, Moonlight sword, you name it.

The areas are beautifull and a lot of thought was put into their design. The river of blood, the hospital and the fisher's village are probably my favorite areas of the game.

A game that simply consists out of different dialogue choices could hardly be called a game, since it functionally would hardly be different from "choose your own adventure" books. However, making a game that consists exclusively of bloodshed and fighting is entirely within the realms of possibility, in fact there are many such examples, and some are even praised as one of the best videogames in history.

Once that falls to shit they end up irrelevant like Final Fantasy now is.

Why are you allowed to repeat your point as if the amount I listed was not enough? The amount of combat-driven action RPGs is just as vast, if not larger, than those which are story-driven, mainly because making a good, elaborate combat system can be easier than getting your hands on a decent writer. And the total amount of all combat-based games completely overwhelms those which focus on character and world interaction.
Hell, this is not as relevant, but most such RPGs can trace their roots to D&D, and D&D at its core is simply a guideline to carnage based on warhammer.

Because its true? And that statement about Final Fantasy is undeniably true. The most prominent RPG franchises, most of which have long utilized random encounters and turn based combat, have never had combat systems that have even touched the most pedestrian of fighting games and the most acclaimed titles are acclaimed because they excel at things things other than combat. You think there's a chance of anyone playing Planescape Torment's or Elder Scroll's or Gothic's combat competitively like with any FPS? And yet the first of these, two decades later, is regarded as one of the greatest RPGs ever made. Combat in RPGs is called "grinding" because most of the time it's not the meat of the game.
