Do you mean custom as in the art on the stick, or the actual mechanical stick itself? Lots of sites have custom sticks, but when you want custom art with it, it's nearly impossible.

You don't buy custom sticks, you make them.
Buy a simple stick used and mod it.

You can buy custom sticks, but it's just someone doing stuff you can easily do yourself and jacking the price way up.

Look up for tek-innovations for custom plexis and art prints. If you want to do art modding, don't get a Hori stick.

Where can I go to try out how different buttons/sticks feel before I try to buy parts?

You could make a top tier stick with only $100. Buying some sanwa buttons and sticks would cost less than $50 and for the PCB/motherboard you could buy a used hori fight commander pad for like $20.

Now the real problem here is making the case. If someone sold cases making your own stick would be easier than building a PC.
