Get burned out halfway through, got annoyed that I can beat ridiculous optional bosses, got annoyed that some classes expect you to grind for 500 hours (Ordainer).
Also manage to get a character stuck in a shit class in one of my playthroughs which made me start over too.
I think the only way I'll ever finish this is if they invent brain bleach.

No matter how complex and rewarding the gameplay is the story is generic as it can get, having to endure a mediocre story in a RPG is wasted effort, you can ignore story in other genres like fighters, shooters, action, etc, but not in a RPG.

Game does not punish you. The thing you're referring to was a bug in the original XBOX version of the game and was been patched out of that version fairly quickly. If you've played it on any other platform you've never experienced that bug. If you've updated the game on XBOX even once or bought it basically any time a few months after launch you've never experienced that bug.
There's absolutely no reason to avoid fights in the game. Enemies get stronger as your battle rank rises, but so do you. Eventually enemies stop getting stronger, but your rank continues to rise and you get even stronger.

I was on PC so that bug wasn't there, I just saw that enemies were growing much stronger than I was / could with the gear I could buy at shops. In 7 fights I remember some dinosaur things going from doing 20% of my hp per attack to 40-50% or something ludicrous like that.

I don't remember the exact mechanics, but I'm pretty sure that in order to slow the enemies' stat growth and maximize your own, you want to fight as big a group of monsters you can at once.
More a mid-game thing but a lot of sidequests are locked out after you complete a sewer dungeon, though I'm pretty sure that the game warns you about it.
I see this game a lot but I'm curious about it.
What do you do?
Is there customisation/loot and gear? A variety of it?

The PC version is so much better you almost won't believe it. The Xbox360 is really choppy with tons of slowdowns regularly. The PC version not only fixes this, but adds fast forward for combat and a few party customization options for your party.

The safest standard to go by is:

Enemy scaling was too fucked and the characters weren't particularly interesting. Fun for the first dozen or so hours, but that boss fight against the hulk and blade lady was impossible.
I really liked how the battle music changed depending on your party morale. Top tier OST in general too. Also cute grills.
