They're still pokemon?
Is it so hard to imagine some kind arena or setting where only a specific typing of pokemon are allowed to participate?
Something like a "workout place" but you'd probably need a more experienced trainer at working with those types in order to help train others in their usage, like a "mentor".

I like the idea of a fighting tournament focused specifically on fighting types so there's less strange or questionable balance between like a flying pokemon who could theoretically go anywhere, etc.

Sure, but in terms of capability, the average fighting type pokemon is only as fantastical as the average foighting game character: Even the most generic fighting game character still has the sort of special abilities fighting type pokemon do.

Expanding it to include pokemon of all types and body builds allows for way more interesting sort of fighting styles and abilities you don't typically get to see in these games
