And you're largely wrong in your assessment. Nintendo orders a certain amount from a factory in China after securing all the licensing deals, many of which are likely to be for a fixed amount of copies.

The factory has to set up a production line for the item, and ones systems are produces are likely to move on to other orders from other companies.

From a first order is placed until the boxed machines are on Nintendos doorstep is months and months.

Nintendo can't just reorder any amount of systems on a day-to-day basis. They have to buy in bulk to get a good price.

With the NES mini, Nintedo had no idea how successful it would be. They brokered a good deal on ordering a certain amount, and sold them for a profit. They maybe ordered one more batch, but even that seems doubtful. And if certain software licenses wouldn't have been valid for a re-run, it would have been a nightmare anyway.
