Depends. I'm sure you know that there's a split in the franchise. You can start with the first Castlevania to get a sense of what the series was like prior to the switch, or SOTN to get a sense of what it was like after.

Though I say play the PC version of Rondo of Blood before hopping into SotN.

Circle of the Moon is objectively the best castlevania, you should definitely give it a try.

Awful advice. 4 and Bloodlines are solid, Chronicles and The Adventure Rebirth are excellent. Even Dracula X is worth playing, it's a classic Castlevania using Rondo assets, and isn't a boring cakewalk like Rondo.

SotN is gorgeous, but it is easy, gentle for newcomers. Older games will fuck you in the ass though.
