There are also games like Resident Evil 4 which dynamically change the game based on how well you're doing. Like it might give me more health items if I die a lot or reduce the number of enemies in an area if I'm doing badly, or give me less health items and introduce more enemies in area with improved A.I if I'm doing well.

The first type annoys me more since it's so much more blatant, plus the second type [in theory] makes the game challenging throughout if you're doing well.

no they're not, master has all the resistances in the game (yours and enemies') maxed out to 100% of the original value.
easy has all resistances in the game (again, yours and enemies') lowered all the way to 30% of the original value.
which would mean that, you would need approx 3,3x more bullets to kill the same enemy with the same gun on easy, than you would need on master. the more time (and resources) you need to kill an enemy, the higher the chance the enemy will hit you (i've noticed that rarely the enemy hits you with the first 1-2 attacks, unless you're really dumb).
master is only harder if you can't aim for shit, or don't use the radar ever

it's not the resistances, but the damages that are changed based on diff chosen.
i remember modding the stalker a few months ago and noticing that the difference in difficulties is mostly how much damage you/the enemy takes.
