The only time I felt like boss fights were difficulty was when I first played Dark Souls. Since I was new to the series, I didn't have a clue on how to approach them. But after I realized that the same strategy can be used for 99% of all the boss fights in the series, it became stupidly easy and unrewarding

I like boss fights. They're fun to design and it's a shame that good ones are few and far between. I imagine it has something to do with the fact that the presentation side of boss fights can be really time consuming, with large sprites and complex animations, and there isn't a huge amount of payoff in terms of raw gameplay time. Other than that, plenty of genres don't really play well with the concept, and I imagine some games can't really get as creative as they should because of the way their setting holds them back.
