Hellmoo is one of the best capitalism simulators I've played, helps that it's a MUD and you can jew actual living people.
Basically if you're a bad enough dude you can corner the market on certain vital resources, weapons, and drugs and recruit other players as lackeys and fight other corporations.
It's basically one big ancap simulator.
Pretty much any Tycoon game, like Roller Coaster Tycoon, Zoo Tycoon etc.
There is an MMO coming out soon called Albion Online. It has six major cities and every city has its own separate auction house. On top of that each region has a specific set of materials

An old Mac game called Capitalist Pig may help, it's been mentioned on /v/ before, it's a corporation simulator. Running a System 6 Mac emulator is super-easy (just look up "mini vmac") and it's even easy enough to create loadable application packages that load directly into the game like everything else.
