Fighting games are a trial of endurance. You don't know how a character plays? Go to training mode. See what their normals are like. Understand their specials. You don't NEED the frame data right then and there. Just get an idea of what their moves look like. Afterwards, maybe play somebody that mains them or watch a video. Get an idea of the playstyle expected. Are they rushdown? Grappler? Both? See how to react. You will lose trades a lot but when something works, double down on it and also diversify your options in training mode. Work on reaction. At some point, when you understand frame data, you look at it and know how to punish what with what. The knowledge you build up is universal in muscle memory and will assist you in other fighting games. That's how you get good.

step one: learn consistent anti airs (gief does well with lariat and standing jab)
step two: learn basic combos. what you need:

>a jump-in combo
>a crush counter combo

these things are easy to grind out in training mode, once you have the muscle memory for them, go play some matches until you can comfortably execute them under pressure without dropping anything.

after that, getting better becomes more intricate and since i dont know much about gief i cant help you very much. get familiar with your mixups, find out what your oki options are after your different knockdowns, find out when and how to best use your v-trigger for pressure and damage, learn your matchups, etc.

Lord knows I won't defend it. Yet I realized that I'm more confident in playing shit like Xrd and Tekken 7 BECAUSE I got past the visual complexities thanks to SFV. It took me a while to get into Super Gold to where I dropped the game for Xrd but goddamn it, did it help me actually appreciate the genre. I honestly legit think its a necessary game for getting people who just DO NOT PLAY FIGHTING GAMES to have this pleasant gateway into the genre. Otherwise, play the other entries out there.
