Think of the levels as maps or stages, Elusives, contracts, and escalations will have you using seperate parts of each map in ways that you'd never usually use them or necessarily even visit. Each level is a map where hundreds of missions take place in different parts.

I was iffy on it until I played that shit. Really hits my stealth game autism, high class, excellent game. Buying the Steelbook tomorrow.
This game also has the BEST surveillance camera gameplay system I have ever seen. So you have "instinct" vision, basically like detective mode, but it does not allow you to see cameras. Breaking a camera does not cause an alarm, only minor confusion if you hit the glass and someone can hear. But if you are seen you have a countdown to find the camera hub and delete the footage. This is much more satisfying than "vision cone" camera systems which tell you where to stay to avoid and alarm, and doesn't fall into the trap of not allowing you to break the cameras like back in the day on Goldeneye or Perfect Dark.
