Peach doesn't know where the chest is in the Mushroom Kingdom, and if she waited idly in the chest for anyone to open it up, Bowser would, in the mean time, see her missing and do a sweep of the castle and find her easily.
Now, she should have had Twink ask Mario if he's seen a magical chest in his travels, or she should have left a 'help me' message in the chest and checked if anyone picked it up by checking up on the chest.
Either way, escaping the castle is meaningless. It's in her best interest to see the castle and it's inhabitants back to safety. By escaping to the surface quickly, Bowser would have to just come back down to the surface and beat Mario's ass again, who will likely still lack the seven Star Spirits necessary to defeat him.
